Cereal Cookies
• 2 c. leftover cooked whole grain cereal
• 1 tsp. maple extract
• 1/2 c. whole wheat flour
• 2 tsp. Vanilla
• 2 tbsp. nut butter
• 1/2 c. chopped nuts or coconut (opt.)
• 1/4 c. Honey
• 1/2 c. chopped dried fruit
• 1/4 tsp. salt
PUT all ingredients in a bowl, and MIX well with hands. DROP onto sprayed cookie sheet by rounded tablespoon, flattening slightly with fingers. BAKE at 350° for 30–40 minutes.
YIELDS: 12 two inch cookies
